how to make your Nigerian pepper soup
Ingredients
- 1 kg assorted meat or fish (goat meat, chicken, catfish, etc.)
- 2 tablespoons pepper soup spice mix
- 1 medium onion (sliced)
- 4 cloves garlic (minced)
- 1 piece ginger (grated)
- 2 tablespoons ground crayfish (optional)
- 2-3 scotch bonnet peppers (chopped or blended)
- 2 seasoning cubes
- Handful scent leaves or uziza leaves (chopped)
- 1 teaspoon dry ground pepper (optional)
- Salt to taste
- 5 cups water
Instructions
- Prepare the Meat or Fish
- Wash the assorted meat or fish thoroughly.
- If using meat, cut it into bite-sized pieces. For fish, cut into steaks and handle gently to avoid breaking.
- Season and Boil
- Place the meat in a large pot. Add onions, garlic, ginger, seasoning cubes, and salt.
- Add enough water to cover the meat and bring to a boil. Cook until the meat is tender.
- Add Spice Mix
- Once the meat is tender, add the pepper soup spice mix, ground crayfish (if using), and blended scotch bonnet peppers.
- Stir well and let it simmer for 10 minutes to infuse the flavors.
- Adjust Seasoning
- Taste the soup and adjust the seasoning with more salt or seasoning cubes if necessary.
- Add dry ground pepper if you prefer extra heat.
- Add Vegetables
- Add the scent leaves or uziza leaves. Stir and let it cook for another 2-3 minutes.
- Serve Hot
- Remove from heat and serve the pepper soup hot.
- It pairs well with yam, rice, or simply on its own as a comforting soup.
