African Salad, also known as Abacha, is a traditional Nigerian delicacy popular among the Igbo people in Eastern Nigeria. Ingredients for the making of African Salad (Abacha) are listed below:

  • 2 cups Abacha (dried cassava flakes)
  • 2 tablespoons palm oil
  • 1 tablespoon ground crayfish
  • 1/2 teaspoon potash (optional, helps dissolve the palm oil for a smoother texture)
  • 1 teaspoon ground pepper (or more to taste)
  • 1 medium onion, sliced
  • 2 tablespoons ground ehuru (calabash nutmeg) – optional, adds a distinct flavor
  • 1-2 stock cubes
  • Salt to taste
  • Vegetables – sliced fresh garden eggs, scent leaves or utazi leaves (for garnishing)

You can also add Fried fish or dried fish, Cow skin (kpomo), Boiled eggs, garden egg, ugba and Roasted groundnuts.

Instructions on how to make the African Salad (Abacha):

  • Prepare the Abacha:

Soak the Abacha in warm water for 5-10 minutes until it softens, then drain and set aside.

  • Prepare the Palm Oil Mixture:

In a small bowl, dissolve the potash in a tiny amount of warm water. Add the palm oil to this potash mixture and stir until you get a thick, yellowish paste. (If not using potash, simply heat the oil lightly until it’s smooth and set aside.)

  • Mix the Seasonings:

Add the ground crayfish, ground pepper, ehuru, and crumbled stock cubes to the palm oil mixture and mix well. This will be the main seasoning sauce.

  • Combine the Ingredients:

In a large bowl, add the softened Abacha, Ugba, sliced onions, and your palm oil mixture. Mix thoroughly to coat every bit with the sauce.

  • Adjust the Taste:

Taste and adjust the seasoning, adding salt or extra stock cubes if needed.

  • Serve:

Arrange the Abacha in a serving bowl. Garnish with scent leaves, garden eggs, boiled eggs, groundnuts, and any other toppings you prefer.
