Ingredients

  • 1 kg assorted meat or fish (goat meat, chicken, catfish, etc.)
  • 2 tablespoons pepper soup spice mix
  • 1 medium onion (sliced)
  • 4 cloves garlic (minced)
  • 1 piece ginger (grated)
  • 2 tablespoons ground crayfish (optional)
  • 2-3 scotch bonnet peppers (chopped or blended)
  • 2 seasoning cubes
  • Handful scent leaves or uziza leaves (chopped)
  • 1 teaspoon dry ground pepper (optional)
  • Salt to taste
  • 5 cups water

Instructions

  1. Prepare the Meat or Fish
  • Wash the assorted meat or fish thoroughly.
  • If using meat, cut it into bite-sized pieces. For fish, cut into steaks and handle gently to avoid breaking.
  1. Season and Boil
  • Place the meat in a large pot. Add onions, garlic, ginger, seasoning cubes, and salt.
  • Add enough water to cover the meat and bring to a boil. Cook until the meat is tender.
  1. Add Spice Mix
  • Once the meat is tender, add the pepper soup spice mix, ground crayfish (if using), and blended scotch bonnet peppers.
  • Stir well and let it simmer for 10 minutes to infuse the flavors.
  1. Adjust Seasoning
  • Taste the soup and adjust the seasoning with more salt or seasoning cubes if necessary.
  • Add dry ground pepper if you prefer extra heat.
  1. Add Vegetables
  • Add the scent leaves or uziza leaves. Stir and let it cook for another 2-3 minutes.
  1. Serve Hot
  • Remove from heat and serve the pepper soup hot.
  • It pairs well with yam, rice, or simply on its own as a comforting soup.
