How to cook your yam porridge
Ingredients:
- 1 medium-sized yam (peeled and cut into chunks)
- 1 cup of palm oil
- 1 medium onion (chopped)
- 2 tablespoons ground crayfish
- 2 medium-sized fresh tomatoes (chopped) or 3 tablespoons tomato paste
- 2 scotch bonnet peppers (blended or chopped)
- 1 smoked fish (deboned and flaked)
- 1 handful of fresh spinach or ugu leaves (optional)
- 1 seasoning cube (optional)
- Salt to taste
- Water (as needed)
Instructions:
- Prepare the Yam:
- Peel the yam and cut it into medium-sized chunks. Rinse thoroughly and place in a pot.
- Cook the Yam:
- Add water to the pot to slightly cover the yam pieces. Sprinkle in a pinch of salt and bring to a boil over medium heat.
- Prepare the Sauce:
- In a separate pan, heat palm oil. Add the chopped onions and sautΓ© until translucent.
- Add the chopped or blended tomatoes and peppers. Fry the mixture for about 7-10 minutes, stirring occasionally, until the oil floats to the top.
- Add Flavor:
- Stir the ground crayfish, smoked fish, and seasoning cube into the frying mixture. Allow it to simmer for 2-3 minutes.
- Combine with Yam:
- Pour the prepared sauce into the pot of boiling yam. Stir gently to coat the yam with the sauce.
- Simmer and Mash Lightly:
- Reduce the heat and allow the yam to cook until it softens further. Mash some of the yam pieces slightly with a spoon to thicken the porridge. Add more water if needed to achieve your desired consistency.
- Finish with Vegetables:
- Add the fresh spinach or ugu leaves, stir, and cook for an additional 2-3 minutes.
- Serve:
- Remove from heat and serve hot. Yam porridge pairs well with fried plantains or grilled protein of your choice.
